
I just made this salad yesterday for lunch and fell in love — the simple preparation belies its beautifully complex flavor! I couldn’t resist adding watermelon to my salad again for dinner last night . . . and for lunch today. Needless to say, I’m hooked. I did not add cheese to this, but if you would like to add a little bit of cheese, the tanginess of feta compliments the sweetness of watermelon perfectly. Also, this salad benefits from an aged balsamic vinegar, though it’s certainly not a must. Enjoy!
Watermelon and Apple Salad
2-3 cups watermelon (cubed)
2 apples (I used Gala, though Granny Smith would add a nice tartness)
6 cups saladĀ greens (whichever you prefer)
1/4 cup pine nuts
3 tablespoons olive oil
1 tablespoon aged balsamic vinegarĀ
salt and pepper to taste
